Easy Olive and Tomatoes Savory Bread Gratin

This is delicious and very easy recipe to give new life to couple days old bread. It is a simple vegetarian dinner recipe that you can use whatever is sitting on your table or refrigerator.

Easy Olive and Tomatoes Savory Bread Gratinserves 66         cups couple days old bread 1-inch large cubes4         medium ripe tomatoes, diced2         cups chopped scallions1         cup pitted and diced kalamata olives1/2    cup chopped fresh basil1        jalapeño, finely chopped2        cups sliced cherry tomatoes1/4   cup olive oil1       cup fresh grated Parmesan cheese1       cup shredded Gruyere cheese-In a salad bowl, toss the bread with the diced tomatoes, the scallions, the olives, the basil and the jalapeño.-Spoon half of the mixture in baking dish.  Sprinkle the Parmesan cheese on top.-Spoon the rest of the bread mixture on top.  Arrange the cherry tomato on top and then sprinkle with the Gruyere cheese.-Cover with foil and bake in 395 F. oven for 10 minutes.  Remove the foil and continue to bake for extra 10 minutes.Serve hot or room temperature.
