Caramelized Pearl Onions

This is an amazing and unique appetizer that can be made couple days ahead of your party.1        pound frozen pearl onion, thawed1/4   cup olive oil1/2   cup sugar1/8   teaspoon ground Annis seeds1/8   teaspoon crushed red pepper1       cup apple cider vinegar-Heat the olive oil and saute the onion over low heat for 5 minutes.-Add the sugar, Annis and the red pepper.  Cook and stir until the sugar is caramelized --dark gold-- and the onions are darker and sticking to the pot.-Add the vinegar and gently stir until the caramel is dissolved.  Simmer for 10 minutes and the sauce thicken.  Remove from the heat.  Cool and then serve.
