Spicy and Sweet Baked Mashed Sweet Potato

I am a big fan of sweet potatoes. I make baked sweet potato with little cinnamon for snack. I use it to make great scones and very healthy biscuits. I make fabulous baked sweet potatoes fries but this dish seems to be my customer's favorite.  Sweet potatoes is very nutritious dessert, in my opinion,  that you can find year around.IMG_2642IMG_2643 

Spicy, Sweet and Savory Mashed Sweet Potato with Cilantro and Walnuts

You might think that sweet potato and caramelized onions do not together but tasting is believing.
  • 2 medium sweet potatoes
  • 1/2 cup olive oil
  • 1/2 cup chopped cilantro
  • 1/4 cup coarsely chopped walnuts
  • 1/4 cup chopped cranberries
  • 1/8 teaspoon coriander
  • 1/8 teaspoon cayenne
  • 4 tablespoons lemon juice
  • zest of one lemon
  • salt to taste
  1. Bake the sweet potatoes in 400 F. degree oven for 40 minutes or until the potatoes are done and soft.
  2. Heat half of the olive oil. Saute the walnuts for a minute. Add the cilantro and the cranberries. Stir for few seconds.
  3. Turn off the heat and then season with the coriander, the cayenne peppers and the salt. Set aside.
  4. Peel the baked sweet potatoes and mash them until smooth. Add the rest of the olive oil, the lemon juice, the lemon zests and salt. Tastes, adjust the seasoning and then spoon into baking dish.
  5. Bake in 395 F. degree oven for 25 minutes.
  6. Remove the baked sweet potatoes from the oven, top with the cilantro and walnut mixture and savor the flavor
