Bulgur and Romaine Lettuce Salad

This salad has everything, fiber, texture, flavor and full of nutrients.  This salad can be full meal by itself and it is one of the few salads that  tastes good for couple days.

serves 4-6

1/2     cup coarse bulgur wheat, #3

1         cup cooked garbanzo beans

8        leaves Romaine lettuce, chopped

4        scallions, chopped

2        medium tomatoes, diced

1        punch Italian parsley, chopped

1/2   cup coarsely chopped walnuts, toasted, optional

1/2   cup lemon juice

5       tablespoons olive oil

zest of one lemon

salt to taste

-Place the bulgur wheat in a bowl, cover with water and let it soak for 15 minutes.  Squeeze excess water and place the bulgur in chilled salad bowl.

-Add the garbanzo beans, the Romaine lettuce, the scallion, the tomatoes and the parsley.

-Whisk the lemon juice with the olive oil, the lemon zest and the salt.  Drizzle this dressing over the salad and toss well.

-Sprinkle with the toasted walnuts and serve.
