Hello Eve: I use white sorghum flour because it is cheap and tasteless so it does not effect the flavor of the recipe. See if you can grind the course sorghum into fine flour. Yes of course you can substitute other flour. Yellow maize and rice flour tend to dry faster than white sorghum so, if the recipe call for 1 cup white sorghum I would use 1/2 cup rice flour or yellow maize with 1/4 cup buckwheat or soy flour and last 1/4 cup of boiled and pureed white rice. Let me know how that turn out.

Hi. I am gluten intolerant and was given a copy of your book: Gluten Free Mediterranean by a friend. I notice many of your recipes require sweet sorghum flour. I live in South Africa and while course sorghum meal is very common and used in traditional porridge, we dont have sweet sorghum flour. Is there another flour I could substitute that has similar properties? We have yellow maize flour, buckwheat, rice... What do you suggest? Thanks

Reading this reminds me of my late room mate. That guy was one of the smartest characters I know, but he was a little weird for my tastes though. Anyways I liked reading this, thanks. Will give me something to talk about when I see him.
